Appearance / Color – Dark cherry wood
Nose / Aroma / Smell – Dried herbs, exotic spice, roasted almonds.
Flavor / Taste / Palate – Light, sweet honey, lemon grass and a hint of tarragon in new oak.
Finish – Long, crisp, with baking spices.
SUNTORY VERY RARE OLD
Nose – Sea weed, little vanilla and toffee, but rather strange
Taste – Very sea weedy, salty, green fruits, zesty – relatively punchy and oily
Finish – Medium long and warm, more zesty and strange
Hibiki Master Select
Nose: Citrus blossom, mango and juicy raisins. A slight touch of vanilla-rich oak.
Palate: Chocolate orange, creamy wood notes, dried apricot and sultanas, cinnamon.
Finish: Plum and ginger. Brown sugar and milk chocolate.
The Hakushu Single Malt
Nose: The herbs are very up front with this one. Peppermint, pine and pleasant grassy notes. Cucumber and melon round out the nose.
Palate: All the notes on the nose swim effortlessly through the palate, the mint developing sweeter notes as it goes on. Citrus zest also pops in to say hello.
Finish: A waft of smoke appears during the long finish.
Overall: This shall make a fantastic Highball. Oh yes it shall.
