Two Stacks Polaris Cask 1.2

A 6-year-old Single Pot Still, aged in ex-bourbon casks for 4 years and 11 months. before a final 14 months in a single 220L French Oak cask from Ontario- Canada, where it was previously used to age Cabernet Franc Ice Wine. This extremely limited whiskey is bottled at cask strength with only 300 bottles available. Each one is hand labeled, wax-sealed, and stamped with the Polaris symbol.

Nose: An Immediate arrival of maraschino cherries carries you through a sensory overload leading to soft chocolate notes, summer fruits, raisins, a hint of nutmeg, and sponge cake.

Palate: Full of spice to start, the Pot Still DNA runs through the whiskey like a knife, wonderfully rich, sugar-glazed cinnamon buns, soft green apples, ripe strawberries, and cherries. The texture is creamy and full. A touch of chili oil dances gracefully with the sweet ice-wine influence. A merry-go-round of sugar and spice.

Finish: An exquisite finish that continues long after the initial sip, delicate clove, more cinnamon, and a slight sprinkle of cocoa butter.
