• FEUILLETE MORTE

In nature’s cycle, death is renewal: harvest passed, larder stocked, quiet land now still in the tenebrous gloaming. The wood gatherer, through dank mists & wispy bonfire, tugs his collar against the mouldy chill of the forest floor, rustling shades of decay — feuille-morte, nature’s rust — the harbinger of hibernation. This equinoctial arrangement of Single Farm Origins, composted by Head Distiller Ned, is for hunkering down with over the early darkness.

• CUVEE PIQUE – NIQUEAppearance: A peach blush with luscious oils.

  Nose: Strawberries & cream, a walk through a garden in summer bloom, pear peeling, freshly cut grass, carrot cake, sea mist, toasted almonds, hay dust, mint chocolate, mixed berries.

  Taste: Dry but mouth puckering with a spice heat that grows and lingers, dark chocolate with sultans, coriander, blood oranges, crème brûlée, peppercorns, porridge and honey, ginger, plums, bell peppers.

  Finish: Lingering spice that goes from dry to chewy, a summers nose and a taste to take you to a balmy summer’s night.

MICRO CUVEE – HEARTH

Appearance: Sunkissed orange with legs and oils that remind me of rain on a window pane of a winters day.

Nose: Apricot, sultanas, maple syrup on pancakes, candied apples, sage and thyme, mince pie, digestive biscuits and butter, warm hay, dried flowers.

Taste: White pepper, spicy, grapefruit, sweet and sour, chilly flakes, root vegetables, chewable, dryness, orange zest, coco, slightly malt vinegar & salt, cough sweets.

Finish: A spice heat that dry’s in the middle then is mouth-watering and chewy.

• Taste:

  Lemon and strawberry shortbread biscuits, black pepper, grapefruit, chilli chocolate, oyster crackers, barley sugar, summer fruit compote, liquorice allsorts sweets

  Nose:

  Three peel marmalade, white pepper tingle, mixed dry herbs, cola cubes, sherbet sweets, light lavender in fresh soil
