In 2013, we sourced a selection of six 500-litre solera sherry butts from Bodegas Emilio Hidalgo, all at least 70 years-old. These were all different and included six different sherry styles; Manzanilla, Fino, Palo Cortado, Amontillado, Oloroso and Pedro Ximenez. They were all filled with Dingle single malt new make. After a full 12 years of Pedro Ximenez maturation, we feel that the cask is now ready to be a Celtic Cask. Pedro Ximenez casks are currently very popular in the whiskey industry for finishing whiskeys as they can give significant flavour due to the sweet & intense nature of this sherry style. A full twelve years maturation in a first fill PX cask would be unusual but we feel the result speaks for itself.
The other five sherry casks will be bottled in the years ahead when we feel they have reached their best.
This whiskey is un-chill filtered with no added colouring and was bottled at cask strength.
Notes:
Rancio aromas followed by sweet raisins, apple & pear chutney and toasted oak.
Palate:
Apple Crumble, lemon posset, rich caramel and Christmas pudding.
Finish: An excellent example of an old PX cask. Intense, powerful, with a velvety texture.
