Redbreast 27 Year Old Pork Cask   53.5 %  ABV

Nose Spicy, mature and intense on the nose. Notes of prunes, black cherries, all kinds of preserved fruits, orange peel, chocolate covered raisins, mace, cinnamon and cloves.

Palate Powerful, rich and complex. Great mouthfeel and depth of flavour. Amazingly the oak isn’t too forceful and the overall impression is one of richness and power in harmony. Flavours of dates, prunes and other dried fruits leading to chocolate caramels, mocha coffee, roasted spices and chicory.

Finish Becomes drier with the oak adding a spicy and tannic flourish.

Redbreast Cask 2001 1st Fill Sherry Butt #17126 Single Pot Still 16 Year Old

58.6%.  Limited Bottling – bottle Number 471/600. A superbly rich and complex 16 year old single cask Redbreast. A Celtic Whiskey Shop exclusive. This whiskey can be described as Christmas cake in a bottle because of it’s very pronounced sherry notes. Almost rum-like with aromas and flavours of banana fritters, rum baba, hot cross buns, marzipan, dates, pepper sauce and mesquite.

Redbreast Dream Cask 38yo     45.3 %  ABV

The last chapter in the series of incredible Redbreast Dream Cask releases. This 38 year-old single pot still whiskey is the seventh bottling of specially created whiskeys under the Redbreast name.

First laid down in 1985 in second fill bourbon barrels, this exceptional whiskey was then re-casked in 2013 into oloroso sherry butts.

NOSE -A wonderful and rich combination of herbs and spices with notes of menthol, liquorice, rosemary, and allspice. Fruit elements offer aromas of black cherry and blackcurrants with hints of mango and orange peel. Many years of ageing in a combination of seasoned oak casks give an impression of antique furniture, delicate wood resin and linseed.

TASTE -Tropical and fleshy fruits intermingle with luscious, smooth waves of vanilla and chocolate. Soft oak tannins eventually shine through, enhancing the pot still spices and showcasing notes of black peppercorns, freshly picked garden mint and a mild ginger spice. The fruits continue to build, working in harmony with the nutty undertones. The influences of Oloroso sherry add further intricacy to this complex whiskey.

FINISH -Lingering, with the spices eventually fading, leaving the fruits and oak to have the final word.
